Ingredients

  • 2 ripe bananas
  • 2 eggs
  • 1 tsp cinnamon
  • 1 tbsp vanilla extract
  • 1 tsp baking powder
  • 1 cup flour
  • 1 tbsp maple syrup
  • toppings of your choice Sprinkles, chocolate chips, fruit

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine mashed bananas, eggs, cinnamon, vanilla extract, and maple syrup. Mix until smooth.
  • Add the flour and baking powder, and stir until just combined.
  • Spoon the batter into a greased or lined mini muffin tin.
  • Sprinkle your favorite toppings on each bite.
  • Bake for 15–20 minutes, or until a toothpick inserted comes out clean.
  • Allow to cool slightly before serving. Enjoy!

Notes

Tips:
  • For extra flavor, add a handful of chopped nuts (age dependant) or a sprinkle of cocoa powder.
  • These can be stored in an airtight container for up to 3 days or frozen for longer.
