Healthy Vegan Black Bean Brownies

These Healthy Vegan Black Bean Brownies are rich, fudgy, and naturally sweetened — you’d never guess they’re made with beans!

Ingredients

  • 258 g black beans canned, drained
  • 70 g cacao powder
  • 80 g dates
  • 10 g milled flaxseed
  • 4 g baking powder
  • 180 g milk i used plant-based
  • 50 g nuts/seeds of your choice i use sunflower seeds & walnuts
  • 60 g pure peanut butter
  • 50 g chocolate chips optional

Instructions

  • Preheat your oven to 170°C (fan) or 340°F. Line a square baking tin with parchment paper.
  • Blend all ingredients (except for the optional chocolate chips) in a high-speed blender or food processor until smooth and well combined. You may need to stop and scrape down the sides depending on how powerful your blender/food processor is.
  • Fold in chocolate chips if using, and give the mixture a final stir with a spatula.
  • Pour the batter into your lined baking tin and spread evenly.
  • Bake for 35 minutes, or until the top is set and a toothpick comes out with just a few moist crumbs.
  • Cool in the tin for 10–15 minutes before slicing. The brownies will firm up more as they cool.

Notes

  • Store in an airtight container for up to 5 days, or freeze in individual portions.
  • These brownies are rich and fudgy — perfect as a snack, dessert, or even a luteal phase treat when you're craving chocolate but want to support your hormones too.
  • These brownies are perfect for fertility as you can alternate the nuts/seeds you use depending on the time of your cycle.
