Blend – Add oats, almond flour, desiccated coconut, and chopped mango into a food processor. Blend until the mixture comes together (it should be slightly sticky but able to roll).
Adjust – If the mixture is too wet (mangoes can vary in juiciness), add a little extra oats or almond flour. If too dry, add a teaspoon of honey or a splash of mango purée.
Roll – Scoop spoonfuls and roll into small balls. Coat in extra desiccated coconut.
Chill – Place on a tray lined with baking paper and refrigerate for at least 1 hour to firm up.
